Open face sandwich

Lately I’ve been trying to break out of the box a little with what I eat. It’s easy to fall into a minimalist’s approach to grocery shopping when you live by yourself and I’ve honestly been pretty content keeping it simple – lots of raw fruits and veggies.

However, I don’t think this approach has been good for my energy levels. So I did something I never do… I made chicken.

Which I put on these delicious open face sandwiches!

Crunchy Chicken Avocado Sandwich

Whole grain toast
Mashed avocado
Alfalfa sprouts
Crunchy almond chicken

And here’s how I made the chicken:
Bake unseasoned chicken breast (remove from oven before fully cooked)
Chop chicken
Toss in pan with light avocado oil
Add a splash of balsamic and a handful of sliced almonds
